Summer Fig Recipe by Carmela D'Amore


Fresh Figs

Slivered Almonds must be slightly baked to release there flavour and oil.

To bake the slivered almonds place the desired amount in a baking tray with grease proof paper and bake in the oven at about 180 degrees, turning them from time to time they need about 10 to 15 minutes until they look golden brown.

Wash figs and slice into halves, get some mascarpone and spoon it across the fig generously, then dip the fig into the slivered almonds, place on the plate, and continue with each fig.

With your hands crunch up the amaretti biscotti and place them on top of the figs, then drizzle some vino cotto over the figs and sprinkle the rose petals and there you go!
